Carbon steel vs. stainless steel for Japanese kitchen knives

There's a persistent myth about Japanese knives: carbon steel is for connoisseurs, stainless steel is for beginners – and carbon steel always gets sharper. The reality is more interesting than that.

Steel type matters a lot, but it doesn't tell the whole story. Hardness, heat treatment, blade geometry, sharpening, and the quality of the manufacturer are just as crucial to how a knife cuts and how long the edge lasts.

What do we mean by carbon steel?

In the context of knives, the term is often used to describe steels with low corrosion resistance compared to modern stainless alloys. Japanese classics such as Shirogami (White Paper Steel) and Aogami (Blue Paper Steel) belong to this family.

They can take a very fine egg and are popular with chefs and enthusiasts who sharpen their own knives. However, the steel also reacts with water, salt and acid. Korin therefore recommends that carbon steel be wiped down continuously during use and dried thoroughly immediately after washing.

Patina is not the same as rust

When carbon steel is used on, for example, onions, citrus or other acidic raw materials, the surface will gradually change color. This is called patina. It can be gray, bluish or brownish and is a normal chemical reaction in the surface of the steel.

Orange, porous rust is something else and should be removed. A stable patina can reduce the reactivity of the steel, but it does not make the knife maintenance-free.

What does stainless mean?

“Stainless” is in practice better understood as rust-resistant. Stainless knife steel contains alloying elements – especially chromium – that make the surface much more resistant to corrosion. This does not mean that a stainless knife can be placed wet in the sink or can withstand unlimited contact with salt and acid.

Modern Japanese stainless steels can be very hard and perform at an extremely high level, so it is wrong to equate stainless with soft or less sharp.

Does carbon steel get sharper?

Some plain carbon steels are very comfortable to sharpen and can take an extremely fine edge. But “carbon” alone does not guarantee a better edge. A well-constructed stainless knife with proper heat treatment and thin geometry can easily be sharper and hold its edge better than a mediocre carbon steel knife.

The real question is therefore not only: carbon or stainless? It is also: which specific steel, which hardness, which grinding and which manufacturer?

Maintenance in practice

Carbon steel: wash by hand, dry immediately, and wipe the blade while working if you are cutting highly acidic ingredients. Accept that the surface will develop a patina.

Stainless steel: also hand wash and dry after use. You have a greater margin of safety against discoloration and rust, but good knife care still applies.

Neither of these items belong in the dishwasher. Heat, chemicals, and contact with other objects are unnecessarily harsh on both eggs and handles.

Who should choose what?

Choose carbon steel if you appreciate traditional Japanese steel, sharpen your knives yourself, and don't mind a regular routine of wiping and patina.

Choose stainless if you want high performance with less concern for corrosion. It's especially practical in busy kitchens and for the first Japanese knife.

There are also semi-stainless and laminated constructions that fall between the extremes. That is why we always read the specific steel specification rather than just the category name.
