Spice Mill, Salt Mill or Pepper Mill – Which One Should You Use?

Three names do not always mean three different mills

Pepper, salt and spice mills may share the same silhouette, but their contents demand different things from the mechanism. Some models can be ordered or configured for either salt or pepper; others are designed for one ingredient. The product specification matters more than the name alone.

A pepper mill for whole, dry peppercorns

A pepper mill must crack or cut dry peppercorns to a consistent size. Use whole, dry pepper and avoid damp or especially oily blends unless the mill explicitly supports them. Black, white and red peppercorns vary in size and hardness, so adjust the grind and make sure the corns feed freely.

A salt mill needs a suitable mechanism

Salt attracts moisture and can attack materials not intended for it. Use salt only in a mill approved for salt, and choose dry grinding salt in a grain size that fits the opening and mechanism. Flake salt and damp sea salt are usually better kept in a salt cellar.

A spice mill for dried spices

A spice mill may suit coriander seed, cumin and other dry, hard spices. Seeds differ greatly in size, shape and oil content, however, so check what the particular model is built to handle. Soft herbs, wet ingredients and very oily seeds may clog the mechanism or leave persistent flavours.

Can one mill serve several purposes?

Yes, when its mechanism is approved for the ingredient. Several Alexander models are available for salt or pepper, but that does not mean a used pepper mill should simply be refilled with salt. Residual flavour, dust and material compatibility make a dedicated contents-per-mill approach more reliable.

Choose according to what you grind most

For everyday pepper, a dedicated pepper mill is the natural choice. For dry rock salt, select a salt-compatible version. For changing spices, documented compatibility and easy cleaning matter more than height or appearance.

Keep ingredients and mill dry

Store the mill away from steam, wipe the outside with a soft cloth and follow the maker’s cleaning guidance. Fill modestly rather than storing ingredients in the mill for a very long time. Fresh, dry ingredients and the correct mechanism deliver cleaner flavour and steadier grinding.
