Induction Cookware – Materials, Base and Compatibility
Induction heats the cookware itself
A coil beneath the glass creates a changing magnetic field that generates heat in a suitable ferromagnetic base. The material name alone is therefore insufficient: a stainless-steel pan may fail, while aluminium or copper cookware can work when its construction includes a magnetic layer.
Check the marking and magnetic base
The maker’s induction symbol and product specification are the best evidence. A magnet that grips the underside is a useful quick test, but says little about heat distribution or detection. A flat, smooth base with a magnetic area covering most of its footprint normally gives the most stable contact.
Materials solve different tasks
Magnetic stainless steel and multilayer constructions often combine a robust surface with a heat-conducting aluminium or copper layer. Cast iron retains heat well but is heavy and should be placed gently on glass. Pure aluminium, copper, glass and earthenware do not work alone; they need an induction-ready base.
Match the diameter to the cooking zone
Look at base diameter, not only the measurement across the upper rim. If the magnetic area is too small, the hob may not detect the pan or may heat unevenly. Centre the cookware and choose a zone close to the base size. A wider upper rim is fine when the active base fits.
Use rapid heat with restraint
Induction responds quickly. Preheat gradually, never use maximum power on empty or thin-based cookware, and reduce the setting early. Follow the maker’s limits for booster, oven and cleaning. Adapter plates can reduce efficiency and are discouraged by several hob makers; choose cookware built for induction instead.
