Where most Damascus knives have one hard core between two soft outer layers, the Nagare blade is a composite steel of 72 layers VG2 and VG10. The pattern therefore runs through the entire blade and not just in the cladding layer.

KAI's genius in bread knives

The wave edge changes direction halfway down the blade. This makes the serrations more resistant to chipping than a classic ground edge, and the knife cuts both on the way forward and on the way back – so the crust gives way without the crumb being mashed.

The flow in the steel

This gives a flowing pattern – nagare means flow – which differs from knife to knife. The handle is western in pakka wood with an ergonomic profile, and the edge is 61 HRC.

Specifications

Blade length: 23 cm

Type: bread knife with wavy edge

Wave blade with direction change halfway on the blade

Steel: 72 layers of Damascus VG2 and VG10, 61 HRC

Grind: 50/50, double bevel

Handle: Western pakka wood handle, ergonomic profile

Made in Seki, Japan

Hand wash and dry – not dishwasher safe, never bones or frozen items

//cdn.shopify.com/s/files/1/0058/2890/2981/files/kai-shun-nagare-23cm-brodkniv-brodkniv-by-rune-jakobsen-design-1089419.png?v=1756719346
