Anryu Tsushime

Anryu Tsuchime is a highly respected Japanese knifemaker, known for his craftsmanship, dedication to traditional blacksmithing, and his distinctive "tsuchime" (hammered) finish knives. The Anryu smithy is located in Takefu Knife Village in Echizen, Fukui Prefecture — an area with over 700 years of knife and sword making history.

The Anryu Forge was founded in 1948, and the former master, Katsushige Anryu (4th generation blacksmith), led the company until his retirement in 2020. Katsushige Anryu was known for combining ancient techniques with modern requirements, resulting in knives with exceptional balance, cutting ability and beauty. The name "Tsuchime" refers to the hand-hammered texture, which is both aesthetically beautiful and practical, helping to release food from the blade during cutting.

After Katsushige Anryu's retirement, the forge was taken over by his long-time apprentice, Ikeda-san, who continues the Anryu name and the proud tradition of craftsmanship.

Knives from the Anryu Tsuchime series are typically made from advanced steels such as Aogami (Blue Steel) or R2/SG2 powder steel, often with a curved, elegant profile and a distinct lightness in the hand. Each knife bears the hallmark of respect for the material, for nature and for the chef's work.
