Hinoki – 3 cm thick cutting board in Japanese cypress, 42 x 23 cm
The Hinoki board is made from whole planks, cut from the trunks of Japanese hinoki cypress trees more than 200 years old. We import the hinoki wood for this board from Japan ourselves. A Japanese cutting board that is especially gentle on your knives.
Features:
Hinoki is extremely gentle on knives – carbon steel in particular, and other very hard, brittle Japanese steels, benefit from the soft wood because the edges don't chip so easily when you cut into the board.
Hinoki is hard-wearing, light and antibacterial. The growth rings are tight and the planks have a high proportion of heartwood, so if you look after the board you can use it for many years. And the wood smells absolutely wonderful.
Please note: Hinoki is a very soft, light wood that needs different care and maintenance from our own hardwood boards. Read more about caring for hinoki.
Sizes:
The board measures 42 x 23 x 3 cm and comes in one size.
Quality:
The Hinoki board is cut from whole planks in Japan – a natural product with tight growth rings and a high proportion of heartwood. Hinoki is a soft, light wood that needs different care from our own hardwood boards; follow the care guide and the board will last for many years.
Custom size or a different design?
Hinoki comes in this size only. If you would like a cutting board in a custom size, or one of our own designs in oak or walnut, feel free to contact us at info@rune-jakobsen.dk.
About Hinoki
◎ About use
Hinoki wood expands and contracts as it absorbs moisture or dries.
Avoid excessive drying by exposing it to direct sunlight or leaving it in water for long periods of time, as this can cause the wood to warp and crack.
Wet the surface thoroughly before use to prevent the board from absorbing bacteria and odors.
After use, we recommend washing (or scrubbing) the board with coarse salt instead of using dishwashing liquid. This will preserve the wood's natural antibacterial properties.
Allow the board to dry thoroughly in a shaded area with good ventilation, then store in a dry place.
◎About resin
Resin extraction may occur on the surface. This is a natural resin that is harmless to humans. It is the resin that is the source of the board's wonderful scent and also contributes to the wood's antibacterial properties. If you find the board a little "sticky", you can wipe the board with pure alcohol.

🇦🇺 Customers from Australia
We ship DAP (Delivered At Place) to Australia and GST is not charged at checkout. Whether your order will be subject to tax upon arrival depends on one simple threshold:
Orders under AUD 1,000: No duty, no GST, no fees. Your order is delivered directly to your door at no additional cost — the price at checkout plus shipping is all that matters.
Orders over AUD 1,000: Australian authorities charge import duties and GST, which the carrier will settle with you before delivery. Here's how it's calculated:
- Customs duty: approximately 5% of the price of the goods (the rate depends on the type of goods).
- GST: 10% of goods + freight + customs duty.
- Processing fee: a fixed fee for customs clearance from authorities and the shipping company, typically AUD 100–200 total.
Calculation example: You order goods for AUD 1,600 with AUD 150 in shipping.
- Duty: 5% of 1,600 = AUD 80
- GST: 10% of (1,600 + 150 + 80) = AUD 183
- Processing fee: approx. AUD 100–200
- Total import costs: approximately AUD 360–460 — on top of what you paid at checkout.
Good to know: The limit applies per shipment. So if your order is just over AUD 1,000, it may be best to either keep the order below the limit or add a little more to your cart so that the import costs are spread over a larger purchase — the processing fee is the same whether the order is AUD 1,100 or AUD 3,000.
If you are in doubt about what this means for your particular order, please write to us at info@rune-jakobsen.dk before ordering.
🇨🇦 Customers from Canada

All of our products — with the exception of the Japan collection — are of EU origin and can therefore be imported duty-free under the EU-Canada Free Trade Agreement (CETA). Products from our Japan collection may be subject to customs duties at the regular Canadian rates.
🌍 Customers from other countries

These fees are set by your local authorities and are beyond our control. Many countries have a threshold below which orders are exempt - if in doubt, please check with your local customs authorities or write to us before ordering.
Real products, honest pictures
With us, craftsmanship, materials and aesthetics are at the heart of everything we do. Our product images are designed to give you an honest and inspiring impression of what you're getting – without unnecessary staging.
The vast majority of product photos in our webshop are therefore taken by us – whether it's a grinder, a magnetic knife holder, a serving board or one of our textiles. The images of our wooden products always show genuine, handmade products that we photograph before they are packed and sent to their new owners.
To give you a better idea of how the products will look in different homes and kitchens, we sometimes insert these original photos into AI-generated rooms or backgrounds. Only the background is artificial – the product itself is never altered or AI-generated. Every grain, edge, color, and detail you see belongs to the physical product we created.
We also occasionally receive photos from satisfied customers who give us permission to use them in the webshop. These photos provide an honest and inspiring insight into how our products look in real homes and environments.
No artificial product renderings. No misleading visual enhancements. Just real craftsmanship, photographed honestly.
Indicative images when choosing a variant
We are constantly expanding our product gallery. As many of our products come in a variety of sizes and variations, we do not yet have images of all of them. The image shown when you select a product primarily illustrates the selected wood type – not necessarily the specific size or design variation.
Every piece of wood is unique
Wood is a living natural material, and our passion is to create unique products with character. The grain patterns and color play will therefore naturally vary from product to product. Please consider our images as guiding inspiration and an indication of the quality we deliver.
