KAI Shoso santoku 16.5 cm with air blade - the slices don't slip

Magoroku Shoso is KAI's completely stainless series - blade and handle in one material, without wood or joints where dirt can collect. The handle has an embossed diamond pattern that provides grip even with wet hands, and is one with the polished blade.

What do the air blades do?

The elongated grooves along the blade create small air pockets between the steel and the workpiece. Potatoes, cucumbers and squash fall off the blade instead of following it up - the difference is most noticeable when you slice a lot of the same thing.

Why 56–57 HRC?

The steel is one layer of 5Cr15MoV hardened to 56–57 HRC. It is softer than KAI's Damascus series, and that is the point: the knife is more durable, can be sharpened quickly again and can be used in a busy kitchen without being looked after. On the other hand, it needs to be ironed a little more often than a harder blade.
