Shun Classic Carving Knife 22.5 cm – for the clean cut

A carving knife has one job: to cut large, continuous pieces into neat slices without tearing. The length means you can run the knife through a Sunday roast, a grilled salmon or an entrecote in one go instead of sawing. Shun Classic is KAI's oldest and most widely used series, and the knife most people first encounter when switching from European knives to Japanese ones. The blade is built around a core of VG-MAX, KAI's own advanced stainless steel, which is clad in 34 layers of Damascus steel on each side. This gives a semi-gloss wave pattern that is not just decoration: the softer outer layers protect the hard core, which is the part that cuts.

When do you notice the difference?

With roasts and fish. A short knife requires several cuts through the same piece, and each new cut leaves a mark. With a 22.5 cm blade, you get all the way through and the slice will be even. It is also one of the best choices for smoked cheese, ham and anything that needs to be sliced ​​thinly and presented.
