Shun Pro Sho yanagiba 27 cm – for whole fillets

Twenty-seven centimeters is the professional yanagiba length. The rule is simple: the knife should be longer than the item it is cutting, because the entire cut must be made in one stroke. Shun Pro Sho is KAI's series with traditional Japanese blade shapes and single-edged, asymmetrical grinding. The blade is VG-10 hardened to 61 (±1) HRC, the back is hollow ground (urasuki), and the surface has an etched pattern. The handle is D-shaped pakkawood in Japanese chestnut shape. The knives are ground for right-handed use.

When is 27 better than 24?

For a whole salmon fillet or a tuna loin. With 24 cm, you have to put the knife back in the middle of the cut, and it is visible as a groove in the slice. If in doubt, measure what you cut most often - and add three centimeters. The longer blade, on the other hand, requires space and a board that is deep enough.
