Michel Bras #4 santoku knife, 16 cm – flat edge and good control

The Michel Bras series from KAI was developed in collaboration with French chef Michel Bras and manufactured in Japan. The blade is built in three layers with VG10 as a core and a satin-matt titanium coating; KAI specifies the hardness as 60 (±1) HRC. The pakka wood handle and the series' precise balance are consistent across the knife types.

In use

The santoku's relatively flat edge and high blade make it strong for controlled push and pull cuts. 16 cm gives plenty of room for the knuckles and makes the blade practical as a small shovel when moving the sliced ​​ingredients.

Maintenance

Hand wash the knife and dry it after use. Avoid dishwashers, bones, frozen produce and other hard objects, unless the knife type is expressly intended for the task. Store the blade so that the edge does not rest against other metal objects.
