When Kari and I bought the country estate where our company Rune-Jakobsen Design is located in 1995, two old seed-sown walnut trees were included in the sale. The previous owner of the house stated that they were planted in 1945 and 1950, respectively.
In the following years, we have planted more walnut trees ourselves, so the total population now stands at 6 beautiful trees of various sizes, which supply green walnuts to both private schnapps lovers and professional producers of walnut schnapps and liqueurs.
ABOUT THE NUTS 🍈
2001-2019 the trees
Here you get "modern" walnuts that come from the grafted trees we have planted ourselves over the past 20 years. They are large to medium-sized nuts that give a slightly lighter essence with a lovely mild and soft taste and aroma.
When you order 1 portion we send 300 gr. nuts, which is ample essence for making approximately 3 bottles of schnapps.
The essence can be mixed depending on how strong you want it.
SEASON 🌿
You can order year-round. We pick the fresh green nuts at the beginning of August each year and pack them in portions suitable for making approximately 3 bottles of walnut schnapps.
The nuts are shipped immediately after picking and you can store them in the refrigerator for 5-10 days after receipt.
Please note that when paying by credit card or MobilePay, the purchase amount will be reserved and deducted from your account 1-3 days after placing the order for technical reasons.
If you do not wish to prepay the order, you can alternatively choose payment by bank transfer, after which we will contact you for payment when the nuts are ready for shipment.
This essence makes about 3 bottles of schnapps. You need to be patient – it takes about 1-1½ years to make a good walnut schnapps.
Ingredients:
8-10 Green and unripe walnuts (approx. 350 gr.)
3 bottles of vodka or neutral-flavored schnapps
1 glass with lid of approx. 1 litre
1 portion of patience
How to do it:
Unripe walnuts contain a juice that stains quite strongly, so it's a good idea to wear gloves when cutting them.
Split your walnuts and cut them into quarters or halves. Put them in your glass and pour the liquor over your walnuts so that they are just covered (approx. 4-5 dl). The glass should be twice as big as the walnuts. It is important that they have the opportunity to breathe. Therefore, the glass should not be filled completely, there should also be air in the glass.
Shake your jar every 14 days and lift the lid to allow some oxygen to enter. Place it in a dark place and let it steep for at least 5 months.
When you have been very patient – Take the nuts out and filter the schnapps, let the schnapps run through a coffee filter a few times and you should get a nice dark brown color on your walnut essence. Put it in a bottle and let it sit for at least a month – preferably 6 months.
We recommend mixing the essence in a ratio of 1 part essence to 6 parts neutral vodka or schnapps.
We use about ⅓ essence for one bottle of schnapps, but experiment a little until you find your own taste.
Once you have diluted the essence, the walnut schnapps should stand for another month so that the flavor is allowed to accumulate and becomes less alcoholic in taste.
The longer you let a walnut schnapps sit and age, the better it gets. So it only gets better with each passing year.
