A rondeau is the pan you reach for when you want maximum control: Wide bottom for efficient browning, high sides for quiet simmering – and enough space to reduce sauces, braise meat and make risotto.

A classic rondeau (also called braiser/sauteuse ) is characterized by:

  • Wide, flat bottom with large frying surface for effective browning/sautéing and quick reduction.
  • Relatively low, straight or slightly sloping sides (but higher than a pan) which provide good capacity without “closing” like a tall pot
  • Two side handles so that the clan can be lifted safely with both hands – even when it is heavy.
  • The purpose: a “hybrid” between a pan and a pot so that it can both brown like a pan and cook for a long time like a pot.

Typical usage scenarios: Braised dishes (e.g. osso buco), stews, risotto, sauces/reductions, large amounts of vegetables and dishes where you start with browning and end with simmering in the same pot.
