A Rondeau is a "hybrid" between a pan and a pot.

A tool you use when you want maximum flexibility: Wide bottom for efficient browning, high sides for quiet simmering – and enough space to reduce sauces, braise meat and make risotto.

A classic rondeau (also called braiser/sauteuse ) is characterized by:

  • Wide, flat bottom with large frying surface for efficient browning/frying and quick cleaning.
  • Relatively low, straight or slightly sloping sides (higher than a frying pan) that provide good capacity without "closing" like a tall pot
  • Two side handles so the pan can be lifted safely with both hands – even when it is heavy.

Typical uses: Braised dishes (e.g. Osso Buco), stews, risotto, sauces/reductions, large quantities of vegetables and dishes where you start by browning and finish by simmering in the same pot.

Note:
Copper is not suitable for dishwashers due to the risk of discoloration.
