Moritaka 110 mm Kawamuki is a small, hand-forged Japanese paring and precision knife, made by the legendary Moritaka Hamono, who has over 700 years of experience with traditional blacksmithing.

The name Kawamuki means "to peel skin" in Japanese, and the knife is therefore optimized for precise work with fruit and vegetables , where control and sharpness are essential.

The knife is forged with Aogami Super (Blue Super Steel) at the core – a high-quality carbon steel known for its sharpness, hardness and long-lasting edge.

  • Steel type: Aogami Super (non-stainless core steel), with kurouchi finish (black forged shell), which provides both rust protection and a raw, authentic look.

  • Length: 110 mm – compact and easy to control for fine motor tasks.

  • Hardness: Approximately 63–65 HRC – provides an extremely sharp and durable edge.

  • Handle: Typical Japanese wooden wa handle – light, well-balanced and comfortable in the hand.

  • Shape: Traditional and functional with a slightly curved egg and rounded tip, which provides precision without being aggressive.
