Shun Pro Sho yanagiba 24 cm – the sashimi knife

Yanagiba means "willow leaf", and the name describes the shape: long, narrow, single-edged. It has one task – to cut raw fish in one long, pulling cut. Shun Pro Sho is KAI's series with traditional Japanese blade shapes and single-edged, asymmetrical sharpening. The blade is VG-10 hardened to 61 (±1) HRC, the back is hollow ground (urasuki), and the surface has an etched pattern. The handle is D-shaped pakkawood in Japanese chestnut shape. The knives are sharpened for right-handed use.

Therefore one long pull

Raw fish should be cut, not sawed. If you cut back and forth, you tear the fibers, and the cut surface becomes dull. With a yanagiba, you put the heel against the fish and pull the knife towards you in one motion – the cut surface becomes mirror-like. The hollow ground back releases the slice, so it falls off the blade instead of sticking. 24 cm is the most useful length for home use.
