Shun Pro Sho deba 16.5 cm – the fishing knife for smaller fish

Deba is the heavy Japanese fishing knife, built to get through the head and backbone. 16.5 cm is the size for fish up to a few kilos. Shun Pro Sho is KAI's series with traditional Japanese blade shapes and single-edged, asymmetrical sharpening. The blade is VG-10 hardened to 61 (±1) HRC, the back is hollow-ground (urasuki), and the surface has an etched pattern. The handle is D-shaped pakkawood in Japanese chestnut shape. The knives are sharpened for right-handed people.

How to use a deba

The blade is thickest at the heel, and that is the part you use for the legs – not by chopping, but by putting weight on. The tip is used for the fine work along the spine. The single-edged sharpening means that the knife follows the bone by itself. It takes practice, but that is the craftsmanship behind a properly filleted fish.
