Sakai Kanechika / Fujii Hamono

Sakai Kanechika is a prestigious Japanese knifemaker known for creating hand-forged knives of exceptional quality .

Based in Sakai, a city famous for its blacksmithing tradition, Kanechika uses traditional techniques and high-class materials such as Aogami (Blue Steel) and Shirogami (White Steel).

The knives are designed with a focus on extreme sharpness, durability and balance, making them ideal for both professional chefs and knife enthusiasts who seek precision and aesthetics in their kitchen tools.

A number of the knives are characterized by being sharpened by one of the wildest knife sharpeners in the world - Mr. Fujii Hamono.

Mr. Fujii doesn't forge himself, he only sharpens. This carefully thought-out division of labor ensures that over the 50+ years he has been sharpening knives, he has acquired a fantastic level of expertise.

When we write sharpening in this case, it is not only the final sharpening, but also what can be called ' the initial grind '. That is, from the raw, forged blade to the finished and sharp knife.

He is not the only one in his workshop, he has three students who need at least 8 years to be able to call themselves master grinders.
