MAC Chef nakiri knife – clean vegetable cutting

MAC Chef is a light and straightforward work series with thin, rust-resistant blades. Foodgear states molybdenum steel around 59 HRC and a handle in laminated birch/pakka wood on the models in the series. The geometry is clearly Japanese: less steel behind the edge than on many classic European knives.

In use

The rectangular profile of the nakiri is made for vegetables. The flat edge works with the entire blade length against the board, so onions, cabbage, herbs and root vegetables are cut cleanly without the need for a large rocking motion.

Maintenance

Hand wash the knife and dry it after use. Avoid dishwashers, bones, frozen produce and other hard objects, unless the knife type is expressly intended for the task. Store the blade so that the edge does not rest against other metal objects.
