TOP NOTCH is an elegant and popular board with a continuous handle that gives a sharp, visual expression.
With a thickness of 2 cm, TOP NOTCH is suitable for serving, for example, cheese or charcuterie - and at the same time super practical in the kitchen as a cutting board, because it is handy and easy to move around with.
Special measures
TOP NOTCH can also be made in special dimensions, so that it can, for example, lie over your kitchen sink, washbasin or bathtub. Please send us an email if you would like a TOP NOTCH in special dimensions.
In everyday life, large cutting boards are not always an advantage. Often you have to cut several small things, and large boards can be heavy to handle. Why not divide the tasks onto several boards? Then it is also easier to get help with the cutting work 😉
Niall Williams is an American immigrant in Denmark – and the founder and creative driving force behind Flat Cap Furniture.
Flat Cap Furniture is also the manufacturer of Rune-Jakobsen Design cutting boards – in close collaboration with Torben and Kari Rune-Jakobsen.
Flat Cap Furniture is based on a small farm in North Jutland, where Niall and his family run their carpentry business with the same uncompromising focus on materials, precision and finish that characterizes good Danish carpentry craftsmanship.
We work according to the motto: Same board – new manufacturer. This means that you as a customer will continue to receive the same well-thought-out design, the same high quality standard and the same material feel as before – now simply produced by Flat Cap Furniture.
A quality-conscious alternative to standard products
The vast majority of cutting boards on the market today are manufactured industrially in large series – where pace and volume are often prioritized over material quality and processing.
We have chosen a different approach.
Made to order in our own carpentry workshop
Each cutting board is made on order in our own carpentry workshop in North Jutland, Denmark – in solid oak, smoked oak or walnut.
We do not pick your order from a warehouse. If you order a board, we will manufacture it specifically for you.
This means that we actively consider grain patterns, colour play and structure, so that you get a personally made cutting board with its own expression – and a result that is unmatched.
Precision, aesthetics and good craftsmanship
We consider our cutting boards an integral part of the modern kitchen, where details are crucial.
The wood is selected with a focus on balance and overall impression, after which it is cut and assembled in a way that ensures high dimensional stability and a unique visual expression.
Each board then undergoes a multi-step sanding process, done by hand, to achieve a silky smooth and comfortable surface.
Finally, the board is treated with a natural, food-grade oil, which protects the surface and highlights the structure and depth of the wood.
Made with everyday use in mind
A cutting board from us is designed to be used and enjoyed every day – functionally as well as visually.
We work exclusively with certified, solid furniture wood and strive for solutions that last for many years and patina beautifully over time.
Standard formats and individual adaptations
In the webshop you will find a selection of well-designed standard formats.
If you have special requests for dimensions or proportions, we offer minor adjustments at no additional cost. Simply state your wishes when ordering.
Right of return – also for custom production
Wood is a living material and no two cutting boards are the same.
Should the expression against expectations not meet your expectations, we offer Full return policy – also on custom-made cutting boards. This is our way of ensuring security in the purchasing process.

CARE & MAINTENANCE
Even if you use our boards often, with the right treatment they will remain beautiful for many years. If you use the board as a cutting board, however, scratches and marks will appear in the wood - unfortunately this cannot be avoided.
Please note that wood is a living material that expands and contracts depending on temperature and humidity - unfortunately metal does not, so you will find that with boards with brass or aluminium, the metal will occasionally "stud" a little - and other times it will be drawn accordingly into the tree. Hopefully, however, it will most often sit where it should as when the board was created.
Wash the board by hand immediately after use, or wipe it with a wet/damp cloth. Remember to wet the board on both sides and let it dry by placing it on its side, otherwise it may warp.
Limitations of Use.
● Do not put in the dishwasher● Do not use for long-term food storage
● Do not use for purposes other than cooking/preparation for cooking
● May only be maintained with food-approved cooking oil
In case of further questions, please feel free to contact us.
The board can easily withstand general. hand wash with washing-up liquid, but the soap will eventually remove the oiling.
NOTE that boards in smoked oak can "contaminate" if they come into direct, prolonged contact with ordinary light oak or brass table tops.
You can give the board a thin layer of ordinary cooking oil on all surfaces from time to time - this will preserve the wood's glow. The board must be completely dry before you apply oil. Should the board nevertheless become a little "rough" to the touch over time, it is because the wood's fibers rise slightly on the surface.
You can make the board smooth again by sanding the wood gently in the direction of the grain with a fine-grained sandpaper with a grain size of 400 or higher, and then giving it a thin layer of Alm. cooking oil (e.g. sunflower oil).
All measurements in our webshop are given in centimeters (cm). If you use inches, here is a quick overview:
cm → inches: multiply by 0.39
inches → cm: multiply by 2.54
Examples:
| cm | inches |
|---|---|
| 20cm | 7.9″ |
| 40cm | 15.7″ |
| 60cm | 23.6″ |
| 80cm | 31.5″ |
| inches | cm |
|---|---|
| 10″ | 25.4cm |
| 20″ | 50.8cm |
| 30″ | 76.2cm |
If you need an exact conversion, a quick Google search — e.g. "20 cm in inches" — is the easiest solution.
We only use carefully selected FSC certified furniture wood. The primary wood species are oak and walnut.
We finish all products with a food-approved oil.
PLEASE NOTE that we always try to create unique and well-crafted products with an exciting visual expression and play of colours. You should therefore take our photos as a guide and not as a guarantee of how the finished product will appear.
Remember that wood is a living material. No two pieces of wood are the same, so all product photos are indicative.
You can benefit from surfing around our website and seeing examples of products we have made in the different wood species to get a better impression of the wood's colour variations, structure and expression.
If you are in doubt about choosing a wood species for a product, you are very welcome to contact us to discuss the options. We are happy to advise and inspire 😊

Real Products, Honest Images
For us, craftsmanship, materials and aesthetics take centre stage. Our product photos should give you an honest and inspiring impression of what you're getting – without unnecessary staging.
The vast majority of product photos in our webshop are therefore taken by us – whether it's a mill, a knife holder, a serving board or one of our textiles. The images of our wooden products always show real, handcrafted pieces, photographed before they are packed and shipped to their new owners.
To help you imagine how the products look in different homes and kitchens, we sometimes place these original photographs into AI-generated interiors or backgrounds. Only the background is artificial – the product itself is never altered or AI-generated. Every grain, edge, colour and detail you see belongs to the physical piece we made.
From time to time, we also receive photos from happy customers who kindly allow us to use them in the webshop. These images offer an honest and inspiring glimpse of how our products look in real homes and surroundings.
No artificial product renders. No misleading visual enhancements. Just real craftsmanship, photographed honestly.
Reference images when choosing a variant
We are constantly expanding our product gallery. As many of our products come in a wide range of sizes and variants, we don't yet have photos of them all. The image shown for your selection therefore primarily illustrates the chosen wood type – not necessarily the specific size or design variation.
Every piece of wood is unique
Wood is a living, natural material, and our passion is creating unique products with character. Grain patterns and colour tones will therefore naturally vary from piece to piece. Please consider our images as guiding inspiration and an indication of the quality we deliver.
In doubt? We're happy to help.

Handcrafted chopping boards in cabinetmaker quality
Our range of handcrafted chopping boards is designed to make everyday cooking easier – while enhancing both kitchen and dining table. We produce everything from compact, functional boards to large presentation and serving boards, ensuring you can find a chopping board that matches your needs and preferences.
Most chopping boards on the market are mass-produced in Asia or Eastern Europe. With us, however, you will find exclusively handcrafted quality products, made in Denmark from FSC-certified furniture-grade oak or walnut, and produced in our own workshop.
Each board is individually made
Every chopping board is made individually to order. We take great care to give each board a balanced, harmonious and distinctive character. It is the small details that make the real difference.
Unlike many other manufacturers, we regard a chopping board as a piece of furniture – and treat it accordingly. Time is invested in achieving a visually coherent and well-considered design.
Silky-smooth surface – made to last
Each chopping board goes through a meticulous sanding process in several stages: coarse, medium and fine sanding, with careful cleaning between each step. The result is a silky-smooth surface that develops a beautiful patina over time and remains pleasant to use and look at for many years.
In other words, we do not produce “buy cheap – use and discard” products.
Materials and food safety
All our designs are made exclusively from FSC-certified furniture-grade timber. In addition, the production of our chopping boards is subject to inspection by the Danish Veterinary and Food Administration, ensuring that the products are safe for contact with food.

30-day right of withdrawal – even on made-to-order boards
When ordering a unique chopping board online without having seen it in person, there will always be a degree of uncertainty. No two boards are ever the same – the grain and character of the wood vary naturally, and the final result may therefore differ slightly from expectations.
For this reason, we offer a 30-day right of withdrawal on all chopping boards – even those made to order.
