KAI Composite nakiri 16.5 cm – the vegetable knife

Seki Magoroku Composite won the Red Dot Design Award in 2013, and it's easy to see why. The blade is made of two types of steel laminated together with copper, so that a thin copper wire runs visibly down the blade. Together with the light pakka wood handle, it creates a knife that is unlike any other.

Nakiri technique

The nakiri has a rectangular blade and stringy edges, so the whole the length hits the board at once. You don't rock it - you put it straight down. The high blade then acts as a shovel when the cut is in the pot.

Design that is also construction

The copper is not just decoration. The laminate bonds a hard VG10 core to a softer outer layer, allowing the edge to be hardened to 61 HRC without the entire blade becoming brittle. You get sharpness that lasts – and a blade that can withstand regular kitchen work.
