Seki Magoroku Kaname kiritsuke knife, 12 cm – K-tip and long, flat edge

Seki Magoroku Kaname is KAI's handmade kiritsuke series. The blade has a hard VG XEOS core sandwiched between two layers of stainless steel, and KAI states a hardness of 60–62 (±1) HRC. The black-grained, octagonal pakka wood handle provides a secure grip and good control over the pointed K-tip.

In use

The Kiritsuke's long, relatively flat edge and distinctive K-tip are well suited for precise push and pull cuts. 12 cm provides a combination of reach for larger ingredients and a tip that can be used for detailed work.

Maintenance

Hand wash the knife and dry it after use. Avoid dishwashers, bones, frozen produce and other hard objects, unless the knife type is expressly intended for the task. Store the blade so that the edge does not rest against other metal objects.
