Shun Nagare santoku 18 cm - the three virtues of damascus

Shun Nagare is KAI's most unusual Damascus series. Where most Damascus knives have one hard core between two soft outer layers, the Nagare blade is a composite steel of 72 layers VG2 and VG10. The pattern therefore runs through the entire blade and not just in the cladding layer.

How the santoku works

Santoku means three virtues - meat, fish and vegetables. The flat cutting line places the entire edge against the board at once, so you cut with a push and pull action instead of rocking. The high blade keeps your knuckles free and acts as a shovel.

The flow in the steel

This gives a flowing pattern – nagare means flow – which differs from knife to knife. The handle is western in pakka wood with an ergonomic profile, and the edge is 61 HRC.
