Timut is magical. This Nepalese relative of Sichuan pepper works beautifully with all types of fish. Its distinctive citrus and grapefruit aroma also complements chocolate desserts, fruit, chutney and jam.

The Timut plant is not botanically related to black pepper (Piper nigrum), but to citrus plants.

It grows wild as a tree with dense leafy branches. Thorns of up to two centimetres make harvesting difficult. After flowering in spring, red berries containing glossy black seeds develop.

The ripe berries are harvested by hand in autumn. The pickers then carefully separate them from stems, leaves and other plant material.

After drying, the small black seeds fall out of the husks.

Suitable for a mortar or pepper mill.
