Seki Magoroku Redwood Santoku Knife – flat edge and good control

Seki Magoroku Red Wood is a traditional KAI series with polished blades in rust-resistant 1K6 steel and a handle made of reddish brown pakka wood. KAI states the hardness at 57 (±1) HRC. The series includes both traditional single-edged Japanese knives and double-edged all-round knives.

In use

The santoku's relatively flat edge and high blade make it strong for controlled push and pull cuts. The shape provides plenty of room for the knuckles and makes the blade practical as a small shovel when moving the cut ingredients.

Maintenance

Hand wash the knife and dry it after use. Avoid dishwashers, bones, frozen produce and other hard objects, unless the knife type is expressly intended for the task. Store the blade so that the edge does not rest against other metal objects.
