Sugimoto Hamono from Tokyo has a classic Japanese design with traditional Japanese carbon steel and a clean right-handed grind.

In the pictures of this knife, you can clearly see the high edge on the right side, so we must emphasise that this knife is only suitable for right-handed users.

Sugimoto does not disclose the specific steel type of this series, but describes the steel as being of high purity and therefore at risk of rust - so expect a knife that behaves as if it was made by shirogami. It is delicate and will patinate very easily.

An Usuba is a traditional Japanese vegetable knife used for cutting vegetables and fruit. The distinctive edge on the right side allows the very fine edge to glide right through the produce and cut extremely thinly. The grinding also makes the blade quite delicate and should not be used for harder vegetables such as butternut squash, pumpkin, etc.

It also takes some practice to use, as the sharpening of the blade causes it to pull slightly to the left when trying to cut down through the workpiece.
