A Rondeau is a "hybrid" between a pan and a pot.
A tool you use when you want maximum flexibility: Wide bottom for efficient browning, high sides for quiet simmering – and enough space to reduce sauces, braise meat and make risotto.
A classic rondeau (also called braiser/sauteuse ) is characterized by:
- Wide, flat bottom with large frying surface for efficient browning/frying and quick cleaning.
- Relatively low, straight or slightly sloping sides (higher than a frying pan) that provide good capacity without "closing" like a tall pot
- Two side handles so the pan can be lifted safely with both hands – even when it is heavy.
Typical uses: Braised dishes (e.g. Osso Buco), stews, risotto, sauces/reductions, large quantities of vegetables and dishes where you start by browning and finish by simmering in the same pot.

Agnelli's stainless steel cookware is built from 1.5 mm thick 18/10 stainless steel sides combined with a 3-layer base consisting of a layer of 18/10 stainless steel, a layer of aluminum and a bottom of ferrous steel.
The use of thick aluminum in the base ensures faster and more even heat distribution. The aluminum absorbs and distributes heat from the ferritic steel disc in
bottom, which improves performance compared to stainless steel alone.
