Fukube Kaji is a Japanese knifemaker with roots in the Noto region of Ishikawa Prefecture .

The company was founded in 1908 by Yusaku Hoshiba and has been in the family for four generations. Today, Fukube Kaji is led by Kentaro Hoshiba, who continues the tradition of producing high-quality hand-forged knives.

Their products range from traditional Deba and Yanagiba to versatile Funayuki knives, all renowned for their sharpness and durability. The knives are hand-forged from Shirogami 2 (white steel) with a Damascus coating near the edge and a rustic kurouchi finish.
