Forged by master blacksmith Satoshi Nakagawa – former assistant to the legendary Kenichi Shiraki – this knife is a technical and aesthetic masterpiece.

  • Blade length: 240 mm – versatile length for both large and small tasks in the kitchen

  • Shape: K-Tip Gyuto (kiritsuke tip) – provides extra precision and control when slicing, chopping and filleting, for example

  • Steel type: Gin-3 (also called Ginsanko) – high-carbon stainless steel with properties similar to classic carbon steel, but with much easier maintenance

  • Construction: Monosteel – the entire blade is forged in one piece Gin-3 for uniformity and easy sharpening

  • Grinding: Double grinded – suitable for both right- and left-handed users

  • Hardening: Approximately 61 HRC – provides excellent sharpness and edge stability

  • Finish: Elegant satin or kasumi finish that highlights craftsmanship and resists stains
