Yamawaki Hamono is from Sakai, a city known for its long tradition of knife forging. They make knives in a variety of steels, from different craftsmen in Sakai. There is no doubt that Yamawaki's knives are an excellent tool for any kitchen.

These knives are made with ZA-18 in the core, and are covered with an insanely beautiful Damascus cladding. ZA-18 is a type of stainless steel that is a bit like VG-10 but has a higher carbon content, and is also hardened harder than VG-10.

The Santoku is what many would call the Japanese chef's knife. Its slightly shorter and less pointed profile is very suitable for working with all kinds of vegetables. Its short blade makes it easier to handle than the slightly longer chef's knife, and is therefore incredibly popular with many, precisely for working with vegetables.

The handles are made of burnt oak, which is dyed blue at the top.
